The Spanish Chorizo ??is a sausage, composed mainly of ground pork and seasoned with spices. Chorizo is characterized its abundant use of paprika. This differentiates it from other types of salami and gives the typical reddish color.

The skin of this type of salami is usually from the pig small intestine and the large intestine is used for the variety called Chorizo Cular. The Chorizo Herradura Picante is so named because it appears in the shape of a horseshoe with the addition of paprika.
