Un poco sobre el salchichón:
The salchichón is a type of pork sausage meat with some elements of fat. Its seasoned with salt, paprika, nutmeg, cloves and coriander and allowed to sit in the sauce for 24 hour. It is then bagged in a cow or pig intestine and allowed to dry for seasoning that can be smoked (ahumado) or simply seasoned for several days.
There are also ranges of salchichón which contain various types of meat. The Iberian salchichón is very similar to other salchichón only that is processed with Iberian pork and added black pepper, salt and oregano. Its then left to dry naturally.
